Cajun Chicken Alfredo

Cajun Chicken Alfredo is a delicious one-pot dinner you can pull together with just a handful of ingredients. A box of penne pasta, some canned chicken, garlic, Cajun seasoning, and Parmesan cheese transform into a spicy, cheesy, Cajun chicken pasta dish that cooks in only 20 minutes. The canned chicken is what makes it so easy, with no raw chicken to prep and cook. The pasta cooks right in the skillet, making this a one-pot meal for easy cleanup. This Cajun Chicken Alfredo pasta recipe will be your go-to on a busy weeknight!

Ingredients

 

  • 1 tablespoon olive oil

  • 1 large red bell pepper, seeded and cut into 2-inch long strips (about 2 cups)

  • 3 cloves garlic, cut into very thin slices

  • 1 1/2 tablespoons Cajun seasoning

  • 4 cups Swanson® Chicken Broth

  • 1 1/2 cups water

  • 1 pound uncooked penne pasta

  • 1 can (12.5 ounces) Swanson® Premium White Chicken Breast in Water, drained

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

Directions

  1. Heat the oil in a 6-quart saucepot over medium-high heat. Add the pepper, garlic, and Cajun seasoning and cook for 2 minutes, stirring occasionally.

  2. Stir in the broth, water, and uncooked penne and heat to boil. Reduce the heat to medium. Cook for 15 minutes or until the penne is tender, stirring occasionally. Remove the saucepot from the heat.

  3. Stir in the chicken, cream, and cheese. Cover and let stand for 5 minutes. Season to taste. Stir in chopped fresh parsley just before serving. Serve with additional cheese, if desired.
