30-Minute Leftover Turkey and Rice Soup

Ingredients

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 4 cloves garlic, minced

  • 3 carrots, peeled and halved

  • 3 celery stalks, halved

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon sea salt

  • 6 cups Pacific Foods® Organic Low Sodium Chicken Broth

  • 3-5 fresh thyme stems

  • 1/3 cup wild rice, uncooked

  • 3 cups shredded cooked turkey

  • 3 tablespoons lemon juice

Directions

  1. Add olive oil to a large pot over medium heat.

  2. Add in all the vegetables (onion, garlic, carrots, and celery) and sauté for 5 minutes. Season with pepper and sea salt.

  3. Add chicken broth and fresh thyme. Bring to a simmer and add wild rice and shredded turkey.

  4. Cover, lid ajar, reduce heat to maintain a low-simmer, and cook for 20 minutes.

  5. Add in lemon juice. Remove thyme stems from soup.

  6. Divide soup into bowls and enjoy!
